As Corporate Executive Chef of a destination built for multi-millionaire athletes and music luminaries, Chef John Hilton accepts nothing but the best for the 40/40 Clubs. Appeasing the palates of the finest clientele, while maintaining a refined sports and entertainment aesthetic, is a delicate balance and Chef John Hilton's greatest skill.
Although Chef Hilton's roots remain in West Virginia, he gave his heart to Sin City. Heading west just after high school, Chef Hilton landed his first position as Sous Chef at Circus Circus Hotel & Casino in Las Vegas. Before long, Chef Hilton moved on to bigger things-much bigger. As an assistant chef at Las Vegas Convention Center and Executive Chef at Cashman Center, Chef Hilton was in charge of overseeing an 11,000 seat stadium that is home to Las Vegas' 51 baseball teams, a 500 seat club-level restaurant, and their banquet facilities. Throughout this time, Chef Hilton managed cuisine for several major events including the Winston Cup, Miss Universe Pageant and Global Microsoft.
The Cashman Center was home to Chef Hilton for nearly seven years, but towards the end, he decided to hone his skills to a higher level. Attending Napa Valley, California's Culinary Institute of America (CIA) Chef Hilton discovered his life's
ambition; food as art. After graduating from CIA in 1998 he made it a point to position himself among the best joining Bobby Flay, Emerald Lagasse, and Wolf Gang Puck during a taping for the Food Network.
Soon enough, Chef Hilton held the Executive Chef position at the Plaza Hotel & Casino in Las Vegas and at Fitzgerald's Hotel & Casino following. Chef Hilton continued to cater to celebrities such as U2, Alex Rodriguez, Rolling Stones, Magic Johnson, Oscar De La Hoya, and many more including his recent additions of Jay-Z and Beyonce.
Chef Hilton's main philosophy of "working smarter not harder" has fit right into the chemistry of the 40/40 Clubs. As the Corporate Executive Chef of all the 40/40 Club locations-New York, Las Vegas, and Atlantic City-Chef Hilton has strived to keep in mind the different personalities of each location while staying true to the overall goal of the 40/40 Club; to create an upscale sports and entertainment bar and a destination restaurant with a menu eclectic enough to please both the palates of an MLB pitcher after a long game or his biggest fan watching the highlights.
While Chef Hilton's greatest accomplishment is cooking for the 40/40 Clubs, a sports bar and lounge owned by entrepreneur and Hip Hop mogul Jay-Z, he attributes his creative inspiration, confidence, and optimism to his family-Siony, Brette, and
Geovanna Hilton and friends, who continually help to refine his unique cuisine classics.
